Spiced Pumpkin Squares

 

It’s pumpkin time! Treat yourself to these spiced pumpkin squares that are so yummy, good for you, and won’t add to your waistline.

Protein-4

Ingredients:
1 cup coconut flour
2 scoops Vanilla Protein powder
2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp allspice
1/8 tsp nutmeg
4 egg whites
8 oz pumpkin puree
4 oz water (can also use almond milk)
Optional: 1/2 cup of your favorite nuts

Directions:
Preheat oven to 350 degrees. Mix flour, protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl. Mix egg whites, pumpkin puree and water in a bowl. Add wet ingredients to dry ingredients and mix together. Spray 8×8 glass dish with non-stick spray. Pour ingredients into dish. Bake 20-30 minutes. Let cool then serve.
